Have you ever noticed how last night's yummy dinner, is suddenly extra delicious when eaten as leftovers? And maybe it is a bit of schadenfreude but it is extra, extra good when all your colleagues just have boring sandwiches for lunch.
I get bored of standard lunches pretty quickly, so I often make extra at dinner time to give me something different. Today's lunch was leftovers of leftovers - recycling at its best. I made a giant pot of bolognaise sauce on the weekend which was turned into several lasagnes. But even after that we had enough to have it with pasta last night and leave me some for lunch today. My hours of cooking on Sunday have so far made 4 meals for us, all the time spent making the key ingredient seems very worth it at this point.

Definitely! Just about to tuck into a helping of last night's chicken & mushroom risotto. :) And like you, I like to cook a large batch of food and have it ready for tasty lunches or fast dinners for a few days. Saves time, saves money, prevents impulse purchases of fast food, and of course there's nothing as delicious as good home cooking. :) Leftovers all the way!

DeleteYES! I'm exactly the same way. I just can't do the same boring thing day after day. I love having leftovers for lunch, and it gets me excited when it's time to eat! Adds a little brightness to a boring work day. I have leftover pumpkin soup, and I baked some yummy bacon cheese and chive rolls to dip in it. Mmm, I can't wait for lunchtime now!

DeleteLeftovers are one of my great adult discoveries :) I too get bored by sandwiches, and I'm finding that a bit of extra preparation time pays off wonderfully in leftovers for lunch and for dinner.
ReplyDeleteOnce in awhile Mum used to pack leftover soup in a thermos when we were at school. It was the best lunch ever. But I agree the variety as an adult is brilliant.
